Portraits of my abuelos through their cooking. My abuelo prepares carnitas, a slowly simmered pork dish that originated in the state of Michoacán. My abuela prepares mole and chicken. Mole is a traditional sauce that is usually made of fruits, nuts, chili peppers, and spices like black pepper, cinnamon and cumin. Various regions in Central Mexico have different variations and flavors of mole. Puebla and Oaxaca are two of the most well know states for their traditional mole dishes.
